On the Lees: Bargains in Oakville
In the not-too-distant past, those who produce Napa Valley cabernet sauvignon came under fire for skyrocketing prices. Detert 2003 Cabernet Franc (45): Softer and less tannic than cabernet sauvignon, this juicy, slightly stemmy cabernet franc from winemaker Tom Garrett has a peppery nose and is a mouthful of ripe black fruit.

Hogue Cellars Genesis Cabernet Sauvignon 2002 - A Strange Brew
As the story goes, the person opened their bottle of Hogue Cellars Genesis Cabernet Sauvignon 2002 to discover a high amount of sediment inside. Traditionally, Hogue Cellars Genesis Cabernet Sauvignon 2002 is described as having a warm raspberry and cherry fruit core with highlights of black olive, nutmeg, tobacco, vanilla, and coffee bean.

Pairing wine and chocolate
It can be an accidental pleasure: After dinner you have a half glass of great cabernet sauvignon left, so ripe and rich you can't give it up. Marsala, port and dark muscats work, but you can experiment with dry reds, especially cabernet sauvignon and zinfandel.

13 and Under
I opened two of my cellar wines over the weekend; a 1989 Girard Napa Valley Cabernet Sauvignon and a 1980 Fisher Sonoma Cabernet Sauvignon - each were13% or less. We certainly dont know the answer, but the quality that these two bottles showed should make a lot of people insecure about extended aging of todays California (and others) Cabernet Sauvignon.

Deja Vu - From French, Meaning "Already Seen."
Frederick is a Cabernet Sauvignon blend (75% Cabernet Sauvignon, 19% Merlot, 5% Cabernet Franc, 1% Petit Verdot) and the name stems from Frederick Corkrum who farmed the five generation wheat land that is now known as the Spring Valley Vineyard.
